Meet Paul Maessen
Our Pavilion Head Chef, Paul Maessen, infuses European artistry into every bite. Born in the Netherlands and trained as a chocolatier in Belgium, Paul handcrafts every chocolate to his own signature recipes—decadent creations as distinctive as they are irresistible. In 1990, he earned second place in New Zealand’s prestigious "Chef Of The Year" competition, a testament to his exceptional skill and creativity.
At The Pavilion, Paul leads our events and weddings with the same precision and passion. Together with his talented team, he ensures every dish is a masterpiece, turning each celebration into an unforgettable experience.
